SUBSTITUTES FOR MEAT.

IDEAS ABOUT VEGETABLES.

Any book is welcome which helps in the now rapid process of breaking down the Englishman's proverbial indifference to vegetables. "Meet for the Meatless, bv Ivan Barker, is a particularly competent and yet original book containing 400 recipes for nut and vegetable dishes. It is prefaced by short, bright chapters on the quintessence of cooking, vitamins, weights and measures, food values, etc., and the recipes themselves are arranged under helpful headings, one section dealing with egg dishes, another with mushrooms, a third with salads, and so on. Not all the vegetables here mentioned arc procurable in New Zealand, nor would every vegetable lover wish to see his vegetables treated in the fanciful fashion that some of the recipes suggest. But the simple recipes are also prominent, and the whole book is a most happy hunting ground for those who seek new culinary ideas. No longer need the unfortunate individual whose doctor forbids him meat wonde* what pleasure life still holds, for this volume, in the hands of a competent cook, would provide gastronomic enjoy ment for a lifetime. ♦"Meet for the Meatless." by Ivan Marker Messrs. Ivor Nicholson and Watson.
