A good way of using up those left-over scraps of pastry is to roll out and cut so many the size of a tumbler, so many the size of a port wine glass, and the rest the size of a sherry glass. Bake in the usual way, and, when cold, put a layer of strawberry jam on the top of the biggest round, then place one of the next size emaller on it, and spread this with apricot jam. Then place the smallest one on this, and on its top either put a whole strawberry from the pot of jam, or a blob of whipped cream, or any other suitable decoration. These turrets make a nice variety, as you can use lemon curd, jam, or even tinned fruits.
