In a further attempt to solve the fancy bread difficulty, the Department of Health has proposed to the Master Bakers' Federation & regulation on the following lines: "Fancy tread to be any bread or loaf by reason of the addition of milk, malt, fruits, etc., which docs not come within the definition of ordinary bread as now laid down. It shall not weigh within six ounces of 21b, nor within, say, fourteen ounces of 41b. It shall be embossed with the mark ljlb, or 31b, as the case may be, with or without the words fancy bread.' by being baked in special separate tins for each loaf marked at the bottom or the side, or where it is not desired to bake in a tin an alternative to be provided whereby the haker would be required to use a 'stick on' label giving the name 'fancy bread' and the weight, such label to be used hygienieally and baked (?) into the bread." On these lines the weight of fancy bread would be obviously shortweight for ordinary bread, and where the fancy I loaf does not keep out of bounds of the weights of ordinary bread, it is to bo assumed that it is ordinary bread anil dealt with accordingly. Fancy bread, if not branded as proposed, will, if the proposal is adopted, be regarded as ordinary bread.
