SHRINKAGE OF BREAD.
James Corley admitted at the Police Court this morning that on June 18 he had sold bread, four loaves, which were short weight, from loz to 4oz. Mr. W. Haokett. for defendant, pointed out the difficulties bakers had in making allowance for evaporation during baking and after. Under a test ma«lp in England it had been shown that (bread that -was ovcr-weij»ht at the time of coming out of the oven had in a few hours shrunk to under-weiglit. Defendant made a 4-ounce allowance in ibaking his 'bread, and this wae the "first occasion during the .50 years the business had been established that he had been prosecuted. Hie Worship said that it wae a matter of making scientific allowance, and bakers β-hould be able to regulate the weight, knowing approximately how long the brend would be out of the oven before sale. This wa« not a case of intent to defraud, and consequently the nominal fine of £2 and costs would be imposed.
