CHEESE EXPORTS.

WELLINGTON, this day.

A large quantify of cheese from the South Island ■ was transhipped yesterday to the Paparoa. I had a, brief chat with Mr . Kinsella, the Government Dairy Cominissionei*, to-day. He personally examined the consignments. Speaking- of the quality he said it showed a. decided improvement of factory make since last season. The cheese on the whole was closer and firmer in texture, and there was scarcely a pasty cheese in the whole shipment. He is in hopes that there will be a further improvement in quality owing" to pushing the cultures and starters during1 last winter. He pointed out that the1 cheese, which is firm in body,, is likely to go on improving, and that .cheese which is pasty or inclined td be weak if exposed to either heat, or cold would go off flavour much more readily. The shipment was fairly uniform, but many of the brands showed room for improvement as, regards flavour. In the cheese sent from the Wairarapa district the quality at the beginning of the season was not as regular as last season, but the shipments now coming forward show a vast improvement. The cheese from Taratnalri, with the exception of one .or two brands, was very .uniform in quality.
