THE MEAT SUPPLY.
Sir, —In connection with the Borough meat supply, would the appropriate authorities answer these questions :
(1) Is it correct that there is no method of guarding the meat against flies before it leaves the Abattoirs. Many people blame butchers for fly-infested meat, hut it would appear that in most cases the trouble is well started before the meat leaves the abattoirs.
(2) Does the Health Inspector watch this point, and would he report on actual conditions at the abattoirs when the meat is taken away on any warm summer morning? All will agree that strong measures should be taken against any chance of diseaseinfection, especially from now on, having 1918 in mind. v HEALTH FIRST.
, [This letter was referred to the Health Inspector (Mr J. G. Kirk), who said he was satisfied that all reasonable precautions were taken to protect the meat from flies at the abattoir. If the writer had any suggestions he would be glad to considei them. . . The manager of the abattoir (Mr A. S. Gray) said that during the last three years the portion where meat was kept was protected with fly-proof gauze. Two more electric fans were installed, making a total of four. Tn addition, butchers were compelled to remove their meat within 2-1 hours after killing. The abattoir was open for inspection to anyone.—r Ed. “Guardian.”]
