At a meeting at Chicago bakers from all parts of the United States formulated plans for marketing vitaminenriched bread on a nation-wide scale. The president (Mr L. J. Schumalfer, of Philadelphia) said that an entirely new type of bread would be marketed immediately, following completion of Government-inspired preparations in the baking, milling and allied industries.

Dr. Wilder, of Rochester, said the need for early action was emphasised by the defence emergency. “There is ample reason to believe that any population receiving a diet of fully adequate vitamins, minerals and other nutritive essentials is better able to withstand the stresses and strains of war or threats of war,” ho added. “Bread is chosen because of vitamins, food minerals and the natural elements of wheat. Moreover, broad is universally used.”
