Economic and Proved Method of Jam or Marmalade Making. To ©very pound of fruit allow sugar and 1 teaspoonful salt to 31b fruit. Boil as usual. Allow three months before using. . Date-Lemon Jam. To 21b dates stoned and chopped add two large cups water and boil half an hour over slow fire, taking care not to let it burn. Dissolve 2 packets lemon jelly in 3| clips water, add to dates, also grated rind and juice of 1 small lemon; bring again to boiling point, then pot. Carrot Soup. Four carrots, 1 teaspoonful sugar,'salt and pepper, 2oz butter, 3 quarts stock (clear). Scrape and slice up the carrots, melt the butter'in a saucepan, put in the carrots, sprinkle with the sugar, and cook in the butter till soft ; keep them covered, and stir occasionally. Bub them through a sieve, and return to the saucepan; pour on the boiling stock, mix well, and boil 20 minutes. It is then ready to serve. Send fried bread to the table with it. Sponge Cake. Ingredients: 1 cup butter, 2 cups sugar, 3 cups flour, and 4 eggs. Mix 2 teaspoonfuls baking powder with flour, and add sugar, whisk butter to a cream, beat eggs and mix all Hie ingredients together.
