Lettuce With Peas.
Wash, drain and slice 2 lettuces; boil them in salted water with a quart of green peas; when tender, drain. Roll an ounce of butter thickly in flour, put it into a stew pan with a teacupful of white stock and a saltspoonful of salt, pepper and white sugar mixed. When this is hot, throw in the vegetables; shake them well and let' them simmer for another 10 minutes, then serve.
