“WAR CAKE”

WILL KEEP FOR MONTHS The following recipe has been tested and found to be very good, and would be suitable to send to soldiers overseas as it will keep for months. It contains no eggs, butter or milk, and it makes an ideal Christmas cake when a few cherries are added and it is iced. Boil together for three minutes the following ingredients:—l breakfastcupful of soft brown sugar, 1 breakfastcupful of currants or nuts, 1 breakfastcupful of cold water, 2 breakfastcupfuls of sultanas, 1 teaspoonful of mixed spice, a pinch of salt, and 3oz of margarine or lard. When the mixture is cold, add one teaspoonful of bicarbonate of soda in a little warm water, and half a teaspoonful of baking powder sifted into two breakfastcupfuls of flour (add enough flour to make a stiff mixture). Bake in a moderate oven for about two hours. This recipe makes a large cake. If it is baked in a small electric oven, half quantities in a seven-inch tin would be better. If preferred, two teaspoonfuls of cream of tartar can be used instead of the baking powder, and more currants may be added instead of sultanas.
