FUDGE SQUARES.
WITH BRAN. (By Jane Rogers.) The next time you feel the urge to go into the kitchen with the idea ot satisfying that periodical craving far home-made candy try this for a new’ and different confection. Not too sweet, but with a rich chocolate flavour and of a consistency that Is something between that of fudge and fruit all-bran fudge squares have the further quality of containing some of the most Important elements necessary to a healthful diet. How they are made: Melt four squares of chocolate over hot water and add one-third cup of butter. Beat two eggs until light, add one cup of sugar, and boat well together; add the melted butter and chocolate, and then stir in half cup of flour, half cup of all-bran, half cup of nut meals and a teaspoon of vanilla. .Pour into greased pau, making a layer about one-third ol' an Inch thick. Bake in a moderate oven for about 20 minutes. This makes 16 pieces 21n square. Containing several nutritious foods, this tasty confection also, through the inclusion of the bran, helps take care of one of our most common dietary faults. Doctors agree that the progressive refinement and softening of foods which has produced our so-called civilised diet has meant the almost complete elimination of the bulky cellulose or regulatory foods that are necessary to keep the body functioning properly. Bran long has been recognised as one of the most valuable of this type of food, and recent laboratory Investigations have proven that, In addition to containing minerals and proteins, It is a rich source of vitamin B, which improves the muscular tone of the Intestines.
