RECIPES.
Hot Pot. —Take lib stewing beef, 2 carrots, 1 onion, a rasher of lean bacon, $ pint of haricot beans and a sliced tomato. Cut the steak into pieces half an inch thick, remove all fat, roll each piece in flour seasoned with salt and pepper. Cook the beans separately. Slice the onion and carrots, and cut the' bacon into small pieces. Put a layer of the cooked beans into a large casserole or pie-dish, then a layer of carrot and onion slices, then the meat and bacon, then Hie tomato and the rest of the vegetables. • Pour over two cups of water, cover the dish as closely as you can, and bake in the oven for 2-J to '3 hours.
Stewed Kidneys. —Skin four sheep’s kidneys, remove the hard parts, and cut them nearly in half, so that they will lie open. Dip them in flour that has been seasoned with salt and cayenne. Slice an onion, and cut two rashers of rather fat bacon into small strips. Grease the bottom and sideq of a deep casserole, lay in it some of the sliced onion, two of the kidneys, and the bacon, then the rest of the onion and kidneys, pour over them a cup of cold water, and bake gently for 24 hours in a moderate oven. Make four pieces of toast, put a kidney on each, pour the gravy round them, and garnish with tiny rolls of fried bacon.
