When the Babcock milk-tester was brought to New Zealand in the early ’nineties, many farmers and factory managers were much averse to it (says the Wanganui Chronicle). -Milk was then being paid for at per gallon and there was much added water. One supplier look back from the factory a daily supply of the latter fluid for reasons best known to himself. The factory manager had suspicions, so, one morning, lie added a portion of rennet to this water, unknown to the man, with the result that his milk, on being brought to the factory next morning, was coagulated like junket.
