Shredded Celery.—This is an uncommon, economical and attractive way to prepare celery which is to be eaten raw. Choose the whitest sticks, wash, cut into pieces about 4in long, and shred lengthwise finely; throw into silghtly-salted water, leave for 3 hours, and it will curl into dozens of little rings. Pile into a glass bowl and garnish with a few strips of red and green chillies. Home-made Condensed Milk.—Add ijlb sugar to H pint fresh cow's milk and bring to boil. Stir in 2 tablespoons moistened cornllour. Cook I minute, set aside lo cool slightly, then pour into jars. When still warm screw on too to make air-tight. This makes ill) condensed milk suitable for pudding-. Use in (be same way as tinned milk. A Bread-making Hint.—Those who do their own bread-baking sometimes find the sponge becomes lifeless and does not, rise. In such a case do not (brow it out. Get the hardest old crust of bread you can find and put it in the rniudle of the sponge, cover up, and put, in a warm place, and in an hour or two the sponge, will have risen and become fit to make into bread. 1 have often found this successful
