RECIPES.
Fflaatwich Cake.—Three eggs, 4oz flour. 4oz sugar, 2oz cocoanut,'6 drops carmine or cochineal. Thoroughly grease the cake tin and sprinkle surface with 1-3 of the cocoanut. Cream the butter and sugar together, then slowly add wcll-beatcn eggs, finally add the flour and the remainder of the cocoanut, pour into tin and bake for 30 minutes in a moderate oven. Turn out the cake on a sheet of paper sprinkled with sugar. When quite cut into 2in dices and sprinkle with sugar. ■ ••• Lemon Pie. —One cup breadcrumbs, 1 cup sugar, i cup water, yolks of three eggs, loz butter, juice and grated rind of 2 Jemons. Mix ail together and bake in a pie-dish lined with pastry. Beat up the whites of the eggs with 4 teaspoonfuls sugar, and a little flavouring if desired. Place on top of the pie when cooked, and bake till brown. Duke Pudding. —Three eggs, Jib breadcrumbs, Jib suet, Jib sultanas, 3 tablespoonfuls marmalade. Mix well and pour into a buttered mould and boil for three hours.
