DAIRYING INDUSTRY.
WORLD'S CHEESE TRADE. NEW ZEALAND LEADS. The volume of the -world's cheese trade is not so large as that of butter, and amounts to about 6,000.000 cwt. (says the Times Supplement). The principal countries which produce cheese for export are New Zealand, Canada, the' Netherlands, Italy, Switzerland, and France. Cheese from these countries does not compete to any great extent, inasmuch as many of them concentrate on types peculiar to themselves, and each consequently supplies a distinct market. For instance, the cheese exported from New Zealand, Canada, and Australia is practically all of the Cheddar type, while the exports from the Netherlands consist mostly of Edam and Gouda. Great Britain's main sources of cheese supplies (Cheddar type) in 1925, and their value, arc given in the following table: — Cwt. £ New Zealand 1,392,871 G,729,920 Canada 1,253,968 6,720,152 Netherlands . 111,985 638,870 Australia .. 80,852 393,530 The decline of shipments of cheese (Cheddar type) from the United Slates, which many years ago was one of our leading sources of supply, is indicated by the fact that last year only 17.855 cwt. of American cheese was imported into Great Britain.
