USEFUL DISCUSSIONS. 11. was a. very important stop that was taken when the Federation of Dairy Factories was formed in Ilawera to embrace all the factories of the district. It has already done, much good work, and at its meetings matters of interest and importance to the industry have been discussed, the results of which have been beneficial.

A meeting of the executive was held last week, when amongst other matters were discussed the laboratory, the relative values of milk and different breeds, inferior milk supply, effect of varying temperature on cheese, coal supplies from Ohura, method of election to Dairy Control Board, motion pictures of the industry. The use made of the laboratory by Ihc district factories was shown in the report, of the scientist in charge (Mr P. 0. Veale). Members of the executive expressed themselves as more than satisfied with the progress made and the increasing use mode by factories of the, valuable services of (he scientist.

An interesting series of experiments is lo be undertaken, as the outcome of the suggestion of the executive, to determine the comparative natures of the milk of the various breeds of cows for cheese-making. In order 1o carry out the proposal it was decided to procure the apparatus required for the experimental work, so as to carry the work through in a scientific way. ~ The efficiency of the, work at the laboratory was stressed by the manner in which inferior milk supplied at one factory was traced to one supj plier, and now the investigation would ! go further and by means of testing all the cows in the herd the trouble would he traced down to particular animals. This proved very markedly the practical value of the institution. In regard to temperature necessary in cheese for shipment abroad, attention was drawn to the fact that, in order to assure that the cheese was landed at the ship’s side at the correct I temperature of 45 degrees, it was essential that the cheese must he cool-

ed at the factory to a point considerably below that figure. This would counteract the effect of handling from lorries and on coastal boats. Members pointed out that freezing was detrimental to quality in cheese, and the question was raised as to whether even this suggested lowering of temperature might not also be harmful. It: was resolved to conduct investigations in the matter. It, was decided to call a meeting of delegates of factories, two from each, to be held on Monday, November 30, when, various matters, and especially the ward system of election of the Dairy Control Board and the 'laboratory, would ho open for discussion. Members gave the matter considerable attention, and agreed that at the meeting of delegates Taranaki voters would thus he in a position to vole in their own interests when the Control Board called a general meeting to consult all producers.
