Tomato Salad.— Peel some good-sized tomatoes, not over ripe, cut them in alu-es and remove the pips ; lay them iv a dish with oil and vinegar in the proportion of two to one, sprinkle pepper and salt over then, according to taste, a few leaves of basil finely minced, and some onions very fiuely sliced. They should lie in the sauce a couple of hours before serving.

A quartern of dough will make a good-sized cake ; with this mix thoroughly a £lb butter, Jib moist sugar, £lb of currant*, well dried aud picked, a little grated lemon rind aud nutmeg, or, instead of the former, a little candied peel may be added. Mix these throughly together, place the bowl in front of the fire, dredge some flower over, and cover it with a thick cloth. It should riac well. Butter the tiu in which it is to be baked, turn the dough into it, and put it at once into a moderately hot oven.
