TO-DAY'S RECIPE
SAVOURY CUTLETS Take lib of cold potatoes, mash and mix well with one beaten egg, and season with pepper, salt and a little nutmeg. Chop some cold meat and a little bacon and mix with it one teaspoonful of finely-chopped parsley, one tablespoonful sauce, and seasoning. Flour pastry board and take a small portion of the potato and flatten into cutlet shape. Put on a good layer of meat mixture and cover with potatoes. Dip in egg and breadcrumbs and fry in boiling fat.
