The strength of coffee consists of an essential oil, which is so exceedingly volatile that, unless great skill and care are exercised, it will be lost by evaporation. The first part of tho process consists of expelling the vegetable vapor accompanied by galic and malic acids; and in tho second purt, tho essential oil is formed, upon the quantity and quality of which depends the value of the berry. The superiority of J. Nimmo and Co's coffees is principally owing to their peculiar process, so regulating the heat and the mode of its application, as to roast tho coffee nt a much lower temperature Ihnn is usually employed, whereby tho risk of burning the berry, or of producing empyreumatic oil, is prevented : tho separation of acid vapour is more gradual and complete, and a larger proportion of aroma is retained than occurs in the common methods of coffee roasting.
