The strength of coffee consists of an essential oil, which is so exceedingly volatile that, unless great skill and caro are exercised, it will be lost by evaporation* The first part of the process consists of expelling the vegetable vapor accompanied by galio and malic acids; and in the second purfc, tho esßenr.ial oil is formed, upon the qunntity and quality of which depends the value •f the berry. The superiority of J. Nimmo and Co's coffees is principally owing to their peculiar process, so , regulating the heuL and the mode of its application, as to roast the coffee at a much lower temperature than is usually employed, whereby the risk of burning the berry, or of producing empyreumatic oil, is prevented : the separation of acid vapour is more gradual and complete, and a larger proportion of aroma is retained than occurs in the common methods of coffee roasting.
