SOME TESTED RECIPES.

An excellent fruit drink.—Required : half a pound of raspberries, strawberries and currants, the juice of two lemons, one braikfastcupful of icing sugar, one quart of boiling water. Stalk and pick over the fruit, then mash it witli a fork to pulp. Rub the icing-sugar through a hair-seive, then add it and the lemon juice to the fruit. Now pour over the boiling water, cover the jug, and let it stand i'or twelve hours. At the end of that time strain out the fruit, and place the jug containing the drink on ice until wanted.

Gingerbred (a genuine German recipe).— Required : Five eggs, half a grated nutmeg, quarter of an ounce of ground ginger, quarter of a teaspoonful of ground cinnamon, nine ounces of castor sugar, nine ounces of flour, six ounces of mixed peel, four ounces of sweet almonds, quarter of an ounce of carbonate of soda, two lablespoonfuls of milk. Well whisk the eggs in a basin, then add to them the sugar and spice. Beat all these for eight minutes. Next add the -** the peel, cut in thin but rather large slices, the flour, the almonds, which should be shelled and coarsely shredded, and lastly the carbonate of soda, dissolved in milk. Stir all quickly together, and pour the mixture into a deep baking-tin lined with butter paper. Shake some shredded almonds on the top, and bake it in a moderate oven about three-quarters of an hour. When it is nearly done, brush the top over with a little icing sugar mixed thinly with a little water.
