Some Tried Recipes.
Sardine Sandwiches: Bone some sardines, have ready some slices of bread and butter, place the sardines on one slice of bread and butter, then spread some picked leaves of watercress or lettuce. Pour a little mayonnaise sauce over, and add pepper and salt. Now place another slice of bread and butter on the top, trim off the crust, and cut them square or oblong. Garnish with parsley. If liked, anchovies may be used instead of sardines.
Lemon Sponge: Put an ounce of gelatine into a pint of water. Add the rind and juice of two lemons, and half a pound of loaf sugar. Simmer gently for ten minutes, strain into a large bowl, and when the mixture is cold and beginning to set stir in the whites of two eggs beaten to a stiff froth. Whisk briskly until it is of the consistency of a sponge. Pour into a damp mould and turn out before serving. If Jiked, a few drops of cochineal may be added te give a pink appearance be'ore putting it into the mould. Time, half an hour to whisk sponge sufficient for a pint and ahalf mould.
Banana Pudding: In a glass dish place alternate layers of slices of sponge cake and bananas, cut in slices across, squeeze a few drops of lemon juice over each layer of fruit. Make a good boiled custard, and let it get nearly cold. Carefully place it over the bananas and sponge cake with a spoon. Stick the whole with pistachio nuts, and serve cold.
