THE tea-blender has to spend many years in acquiring a knowledge of the different grades of tea. He has to educate his palate, his sense of smelling as well as his optics to distinguish the different sorts of teas. The blending is a great art, and, while there are many tea-blenders, the successful ones are few. It is necessary to blend tea because it is . impossible to get the same quality from several gardens. Tea is subject to climatic conditions, soil, treatment, etc. One lot ' may be strong, another may have a fine fragrance, but be lacking in other essentials. The tea-blender brings together just the teas that he requires to make up a standard quality, and if he is an expert the blend will never vary in quality.
