CHEESE SAVOURIES. Rub one ounce of butter lightly into two ounces of flour and make into a stiff paste with cold water and a little anchovy sauce. Roll out on a pastry board and cut in rounds big enough to line four mince pie tins . Melt half an ounce of butter in one pint of milk, mix half an ounce of cornflour to a smooth paste in a little of the milk, and, as soon as the rest boils, stir in the cornflour. Then stir the whole till it boils, and for five minutes after. Leave to cool, then add one egg yolk and stir till cooked. Mix in one ounce of grated cheese, season, and fill the little tins half full with this mixture, then put in a little anchovy paste, and fill the tins with tho mixture. Bake in a quick oven for ten minutes. Serve very hot.
