SWEET CORN PIE

AN AMERICAN DISH. The pic is made in a round dish about three inches deep. First put in a layer of neatly divided, uncooked chicken, powdered with a little sugar and some fried onions: then add slices of hard-boiled eggs, a few pared olives, raisins and little bits of butter; a layer of sweet corn two inches thick forms the crust. This is made by rubbing the contents of a tin of sweet corn through a seive, adding two ounces of butter (some use beef suet very finely shredded) and kneading it into a paste, keeping it rather on the dry side. Bake in a moderate oven.
