To get the utmost possible quantity of juice from a lemon, pour boiling water over it, and let it stand for a minute before squeezing. To keep a lettuce fresh for a couple of days put it into-a clean, perfectly dry bowl, and cover it tightly enough to exclude the air. The lettuce will not wilt and go to waste if this simple preservative is employed. • • • * Equal to butter for cake-making is mutton fat mixed with an equal equantity of other dripping, clarified, and, when required, beaten to a cream with a little lemon juice and a pinch of carbonate of soda added.
Lentils, or haricot beans, make an excellent stock for soup when bones are not available.
