A LUNCHEON DISH
SCALLOPED POTATOES. Peel and cut. potatoes into large dice and boil in salted water for about 5 minutes, drain well, and place in an oven-proof dish. Melt 3 level tablespoons good dripping in a saucepan, add 2 tablespoons flour, pepper, salt, and a little grated nutmeg or ground mace to taste. Cook a little, acid It cups hot milk. 1 grated onion (about 1 tablespoonful). 2oz. grated cheese. 1 teaspoon chopped parsley, yolk of 1 egg.
