GINGER BEER

A RELIABLE RECIPE. Boil 4oz. bruised ginger in 4 quarts water with 11b. loaf sugar for one hour. Then add pint lemon juice and .1 pint honey, also 3 gallons more water. Leave till cold, then strain, and add the whisked whites of 2 eggs. Leave to stand for two days, then draw off the clear liquor and bottle securely. Keep in a cool dark place.
