A TASTY DISH
STEAK AND MUSHROOM SAUCE.
Fillet steak. i pint Bechamel sauce, loz butter. Alb mushrooms, salt and pepper.
Cut the steak into neat individual portions. Peel and clean the mushrooms and chop them finely. Melt thebutter in a saucepan, add the mushrooms and a generous seasoning of salt and pepper, cover the pan and allow th’em to cook gently for 20 minutes or longer till they are tender. Meanwhile grill the steak. Make the griller very hot and cook the steak for two or three minutes on each side to seal the outside and retain the juices. Then reduce the heat and cook more slowly on each side. While the steak and mushrooms are cooking make the Bechamel sauce. Mix the sauce with the mushrooms and allow to cook gently for two or three minutes, stirring all the time. Arrange the steak on a hot dish, mask each portion completely with sauce and garnish with a sprig of parsley.
