Dairy Factories and the Price of Milk.
From our Auckland paper we learn that
the Te Awamutu Cheese Factory pays for toe ■fznilk according to percentage of cream, W running from 2Jd for that over 7 per cent, to for over 10 per cent. The price hitherto has never been below Bjd, but by accepting less, and to be paid according to quality, the milk suppliers are proving to the ga irehulders (who have so far borne the loss) that they are willing to let them have some of the cream, if possible. Although the company has never had cheese condemned in f ueign markets (and large quantities have been sent there), yet, in common with other companies, every year's work has resulted in loss, which it is now proposed in part to remedy by paving a smaller price for the miik.
To prevent the adulteration of the milk supplied to the cheese factuiy this season, whuh was carried on to so large an extent last year, and was douotie-s the cause of a debit balance, the Te Awamutu Cheese Factory Company have fixed the following scale of payment for the different qualities of miik supplied ; —7 or 8 per cent, of cream, 2Jd per gallon ; 8 per cent, and under per cent., 2jd ; t» per cent and under 10 par cent., id ; 10 per cent, and over, 3Jd per gallon. Last year some of the milk received only yielded 2 per cent, of cream. We commend the above to the attention of the directors of the Wairarapa Factories. The Taratahi Factory is paying, we believe, 3JI, while the Greytown Factory is paying 3*d. Compared with the Te Awamntu Factory we are paying a high price in this district. The question arises, How is it that the farmers in the North are able to send in miik at so small a cost compared with our local farmers ?
