IS IT PURE ?

SIMPLE TESTS FOR FOODSTUFFS. Does the milk you buy yield a far I amount of cream? Your tea look's as' it should, but has it been adulterated to give it colour? Have you been purchasing sugar to which some substance has been supplied to give it weight ? In these days of high prices, it pays to make sure that you are being supplied with pure food; besides being more wholesome, it goes further than the adulterated article. TESTS FOR MILK, TEA, BUTTER. Milk may be tested thus: Pour a sufficient quantity into a wineglass or wide-necked bottle, to. fill the vessel, and plunge a bright knitting needle into the milk. If water has been added, the liquid will run rapidly down the' needle. Milk with a good percentage of cream runs slowly and forms a drop at the end. Tea leaves are often adulterated to give them a good colour; this is not a wholesome practice, though it may cover a multitude of faults in tea which would otherwise have no sale. Rub a little dry tea in a white cloth If it has been doctored a brown stain will be left upon the material. Pure tea should leave only a little black dust, light enough to be blown away. Adulterated butter loses those digestible qualities which makes it invaluable as a food. Test its purity in this way: Place a small quantity in a kitchen spoon and hold the spoon over a flame. If the butter is pure it will boil quietly, with a good deal of froth. If not pure it will crackle and splutter and have few bubbles when it reaches boiling point. COFFEE AND SUGAR. Coffee is one of the easiest substances to test. Throw a few grains into a glass of water. Particles of pure coffee will float for a long time. Adulterants will sink rapidly and discolour the water. , To try white sugar, dissolve a small quantity in water, put the solution in a clean glass and hold it to the light. If the sugar is without adulteration it will appear as crystal iin the glass. If mixed with some other its appearance will be •cloudy so that you cannot see through
