ONGA ONGA FLOUR. AS A CERTAIN PREJUDICE seems to exist against this Floor, the following particulars are published for general information : On the 30th October, 1889, a parcel was sent to the Colonial Laboratory for examination, and on the 10th December Sir James Hector reported—“ This flour has ' been tested for bread- making , for tarts , and for calces , and gave every satisfaction .” This not being definite enough, a further sample was sent 16th May, 1890, and with it some “ Snow Drop ” and “ Silver Dust M for comparison. On the 7th June the following report was issued by Sir James Hector COMPOSITION. GENERAL REPORT. 44 These results show that the 1 Snow Drop * and the 4 Onga Onga * flour are practically of the same composition, and contain about 8 per cent more gluten than the flour handed in as * Silver Dust.* As gluten is the most valuable constituent of flour, it certainly appears that the ‘ Onga Onga ’ flour is about equal to that known as the 4 Snow Drop,” and ia superior to the 4 Silver Dust * flour.” (Signed) “ William Skev, F.C.B " It must be clear from this that the prejudice that exists in some quarters against the Onga Onga Flour is entirely unfounded. Samples of special whiteneee owe their colour to a roller process which often deprives the flour of nearly half ita most valuable constituent—the gluten , or flesh-forming element—leaving an undue preponderance of starch sad sugar, and rendering the resulting bread unsuitable and uneconomical for family use. For certain kinds of pastry 4 Silver Duet * may have merits ; for household and general use 4 Snow Drop 1 and 4 Onga Onga 1 appear far better, and of about equal value. H. H.
