VIEWS OF 810-CHEMIST As a result of researches during the war into food values, a bio-chemist in London, Mr J. C. Thompson, is making a hash of Mrs Beeton's most elaborate l'ocipes. Mrs Beeton's "Cooking and Household Management," a very large volume, was completed in 1861, when the author was only 25 and: was a world best seller. Mrs Beeton, who died when only 29, began to tell the world how to manage" its domestic affairs when 23 years of age. The chemist's findings, which .'ire now being published, include the following :---"Made-up dishes, stews and meat pies have great nutritional superiority over joints; boys and girls require more food than their parents; if a woman puts on fat it is not because she eats potatoes, as renouncing potatoes does not reduce girth; theorists who say fried chips are potatoes in their worst form are wrong, as except for potatoes cooked in their jackets fried potatoes are best; the worst form is mashed potatoes. Mashing lets in air, frying seals up the air holes; fish and chips is a most sustaining meal; betwoen-meal snacks are good for you, specially when accompanied by rest from work to eat them."
