PATENT FLOURS

Use in Preference to N.Z. Product. Per Press Association. HASTINGS, February 15. The Master Bakers’ Dominion Conference was continued this morning. Mr C. Cowan (Auckland) was elected president, and Messrs J. S. Jenkinson (Palmerston North) and C. C. Lange (Invercargill) were elected vice-presi-dents. The chief business this morning was fixing the venue of the Dominion executive. After a long discussion, during which Auckland, Wellington and Christchurch were proposed. Christchurch was decided upon by ballot. The election of executive resulted: Messrs C. E. Boon, F. H. Hawker, P. Dunn, G. H. Taigel, J. H. Norton, R. T. Norton and J. B. Mason. Mr Stormont (Auckland) stressed the need for a board of examiners to conduct examinations of apprentices, and the need for raising the standard of pastrycooking to combat the menace of home-made cake shops, of which, he said, there were three hundred registered in Auckland. The view that a reduction in the use of New Zealand flour and a corresponding increase in importation of Canadian patent flours would be brought about by the Government’s continued prohibition of bread improvers was expressed. One delegate said, “I use them and shall continue to use them. Let the Government make a test case if they like. Then we’ll see what co-op-eration exists among the bakers of the Dominion.” Another delegate remarked that he had increased his use of Canadian flour 100 per cent. The conference resolved to instruct the executive to take up the matter with the Government and prepare for a test case if necessary.
