A GREAT SURPRISE.

HAM AND EGG PIE. Now that the days, or rather nights, of surprise parties are with us again, here is an idea that is always popular. Every girl likes to see the men rush the dainties she has provided and to be complimented on her baking and good taste. A sure treat for almost any man is a bacon and egg pie. Here are the ingredients sufficient for four or five persons: lib of pastry, Two or three slices of Green’s bacon or ham. Allow about one egg per person. Three small tomatoes or Holsum tomato sauce. Line a flat piedish or large plate with a good short paste. Be sure to select your bacon or ham carefully. It is not the amount, but the flavour, that counts. You will find Greens bacon or ham by far the nicest. Cut the bacon into small slices and place on the paste, then some sliced tomato, or smattering of Holsum tomato sauce if tomatoes are not available. Next

beat up four eggs with a dash of pepper and salt. Pour into the dish and place the top piece of pastry on. Prick pastry and decorate in the usual way with pastry leaves or twists. Brush the pastry lightly with the beaten white of egg. Place in a hot oven (say 475 degrees in an electric stove), both elements off to give it a good start, then cook slowly in cooler oven about thirty minutes. Eggr may be dropped in, with the yolk unbroken, instead of being beaten if desired. When the pie is cut in pieces the layers of hard cooked eggs and tomatoes look very attractive. This can be served hot or cold. Sausage Rolls. Having made some nice pastry, cut it into as many squares about three and a half inches square as are required. Now take a few of Greens sausages and hold them under running cold water for a few minutes to make them easv to skin. Slice down the middle and you will be surprised how easily the skin can be separated from the meat. Then take small pieces of the sausage meat and place on the centre of each piece of pastry i’OM over and form into dainty little rolls. Brush over with the white of an egg and ba.ke in an electric stove approxi mately 450 degrees, top off, bottom low, for about twenty-five minutes. Be certain to use Green’s Sausages.
