MUSHROOMS AND TOADSTOOLS.
Edible mushrooms should peel cleanly from the outside to the centre and should not discolour when broken or bruised. On the underside of the mushroom are a number of divisions called gills. These should nftt be attached to the stalk. They should be alternately long and short, the short ones going only a little way out from the rim, while the long ones should reach to the centre. On the stem of the mushroom there should be a mark to show where the gills broke away as the fungus grew. Mushrooms have a peculiar earthy smell. It is sometimes said that mushrooms never grow in a wood, but this is not strictly accurate. Mushrooms are occasionally found in woods, while the poisonous kinds of fungi are to be seen in the open.
