The blue coat worn bj’ butchers originated from its being the colour of the uniform of a guild; but its almost universal adoption by the trade is owing to the fact that blood stains show less on that colour than on any other. The sa\ r ing, “True blue will never stain” —a really noble heart will not disgrace itself—has reference to the fact that blue does not show stains.
