TO-DAY’S RECIPE. DELICIOUS TEA CAKES. Ingredients: Three-quarters of a pound of flour. Half a pint of milk. One ounce of yeast. One ounce of butter. One ounce of sugar. One egg. A good pinch of salt. Half a teaspoonful of almond flavouring. Cream the yeast with the sugar, add to it a quarter of the milk made lukewarm, and a quarter of a pound of flour. Beat well. Cover and leave to rise. When well risen, add the remainder of the milk and a quarter of a pound of flour. L-et it rise again, then add the butter, melted, the salt, the almond essence, the egg well beaten, and the remainder of the flour. Put on well-floured board and knead it well, then leave in a warm place again to rise. When well risen, form the dough into a long roll and cut it in slices. Sprinkle them with a little sugar and bake in a moderate oven.
