Essence. 3oz butter. 4oz sugar. 6oz flour. 2 teaspoons cream of tartar. 1 teaspoon carbonate of soda. Salt. Method: Peel and cut up apples. Pack in piedish with sugar, cloves and water. Cover and bake in moderate oven while making the mixture (or they may be- cooked in a saucepan and poured into a piedish when the cake mixture is ready). Cream butter and sugar, add beaten egg gradually, then milk, and lastly sifted flour and rising.
