TO-DAY’S RECIPE. APPLE SPONGE. lilb cooking apples. 3oz sugar. 3-4 tablespoons water. Cloves. 1 egg. 1 gill milk. Essence. 3oz butter. 4oz sugar. 6oz flour. 2 teaspoons cream of tartar. 1 teaspoon carbonate of soda. Salt. Method: Peel and cut up apples. Pack in piedish with sugar, cloves and water. Cover and bake in moderate oven while making the mixture (or they may be- cooked in a saucepan and poured into a piedish when the cake mixture is ready). Cream butter and sugar, add beaten egg gradually, then milk, and lastly sifted flour and rising. Remove cloves from the apples, pour cake mixture over, and bake twenty-five to thirty minutes in a moderate oven.
