MACARONI CROQUETTES. Two ounces of macaroni. Quarter of a pound of ham. Half a pint of thick white sauce. Half a teaspoonful of onion juice. Pepper. The yolk of an egg. Boil the macaroni and chop it finely. Put the meat through a mincer (half veal or half chicken can be used instead of all ham if you have it). Make the sauce rather thicker than for a vegetable sauce, stir into it the beaten egg yolk, the onion juice and a good seasoning of pepper. Cook slowly for four minutes. Mix this sauce with the meat and macaroni.
