PINE-APPLE CREAM TART. Quarter-cup sugar, 4oz. butter, 41b, s.-r. flour, 1 egg, 1 cup milk, 1 small pine-apple and i pint cream. Rub well together the sugar, butter and flour; beat the egg and milk together and mix the whole. Line a dish with the pastry and into it grate the sheet of greased paper to come well over the edge of the dish. Roll out more paste, place on top of greased paper and cook in a moderate oven until well browned. When perfectly cold, lift the greased paper and the top paste will come with it. Whip the cream, place on top of pine-apple and replace the top paste.
