GOOSEBERRY JAM. Ingredients: Seven pounds of green gooseberries, 3 pints of cold water, loz of leaf ginger, 71bs of sugar. Wash the gooseberries and top and tail them. Soak overnight in a basin with the cold water. Put the whole into a preserving pan with the leaf ginger sliced as finely as possible. Cook very slowly till the water has boiled in, then add sugar and boil fast till the jam sets. Take out any remnants of ginger, skim well, and pot while still hot. Cover the pots with grease-proof paper and tie on firmly with thin string. Be very sure the covers are on really firm, otherwise the air will turn the top of your jam mouldy—and home-made jam is such a delicious thing to be able to keep in your own little stort^-^upboard!
