THE GOTHIC'S CHILLED MEAT.
A - letter received in Christohurch from Mr Thomas Borthwick speaks very highly of the quality and dressing of the mutton and lamb supplied by the Christohurch Meat Company for the experimental shipment of chilled meat by the Gothic, but regrets that Borne of the beef was not so well selected. Mr Henry Eeynolds, of Auckland, who was in London at the time this shipment arrived, states that the bsef was as fresh and dry as if newly killed, and most was heard of its alleged defects of quality and dressing from those interested in the American chilled beef trade, and consequently in the failure of the New Zealand shipment. Mr Eeynolds purchased a joint ot the beef, which was cut in his presence. He invited several influential men to the dinner at which it ! was served, and all declared it to be equal in every respect to Home-fed beef. As regards the beef the syndicate was quite satisfied with the result, and will probably .arrange for a regular trade, but it is evident that mutton will have to be carried in chambers by itself at a different temperature from that of the beef. «—-.-■ "~*
