PRESERVATIVES IN BUTTER.

EXPERIENCE AT HDME. There has been much discussion m. farming circles over the recent statement made by the chairman of the. Dairy Board concerning preservatives in butter, and a letter of particular interest bearing on the subject has just been received from a well-known English firm of dairy producers. The letter is dated London, February 4, and concludes as follows:—'lt is difficult to say how the butter market will go. There is no doubt about it that butter without preservative is not keeping so well, and it is just possible that the buyers will not store any' quantity of this butter this year, in which case there will be no lift in the market and we may come a little lower. The. butter is all. right when it is first landed, but when it gets out to the shop's, and stands on the counter-a .few days it goes quite 'off.' Of course, some factories are much better than others.'' The recipient of the letter remarked that the going "off" of butter in the shops.did not mean that it".went bad, but that it lost its "bloom" and something of its flavour.
