| TO-DAY’S RECIPE j COOKING THE HAM * Soak the ham over night, * X scrape off the rusty spots, and * put into a pot with plenty of cold X water to which a teaspoon of *;* X mixed herbs and a few cloves X have been added. Boil very slowly, removing the scum as it *? rises, and when cold remove the X skin and trim the fat off around X the edge. Sprinkle with bread * crumbs, and put a frill of paper X round the knuckle. The time of * cooking for a new ham is about 25 minutes per pound. X
