TO-DAY’S RECIPE CHEESE SOUFFLE 2oz grated cheese, whites of 4 eggs, * pint of milk, loz flour, 2oz butter, yolks of 2 eggs, 1 teaspoon mixed mustard seasoning. Blend the flour with a little cold milk. Heat the remaining milk, add the butter and stir in the blended flour. Stir well and boil for 5 minutes. Cool, and add the cheese, seasoning, mustard. yolks and lastly the stiffly beaten whites. Turn into a buttered dish and bake for half to threequarters of an hour.
