IMPROMPTU MEAL
BOUQUET FOR MODERN GIRLS In the more congenial and happy-go-lucky households it is no uncommon occurrence for the woman of the house to have visitors sprung upon her for a meal with the minimum of warning. And while the well-behaved guest will always protest that bread and cheese will meet the case, there is undoubted satisfaction in providing something a little unexpected without having to get hot and bothered over it, states an overseas exchange. The wise housewife will always have a few impromptu meals up her sleeve, so to speak. Here is one that she will do well to add to her collection. The first course takes precisely five minutes in a fairly hot oven, as it needs merely to be made thoroughly hot before serving. Empty a tin of spinnach into a buttered casserole, together with a little pepper and salt, and, if you like, a tablesspoonful of cream. Cover the spinach all over with thin cooked slices of gammon, cover, and put in the oven or in a steamer. It tastes well, and potatoes need not be served with it. although some cooked chips are an improvement. For the sweet course you proudly offer creoled bananas. For this delicious dish you need bananas sliced longwise. some dark brown sugar (the darker the better), and some rum. A small wineglassful of rum will serve for four people. The bananas are piled in a covered casserole, mixed with the sugar to taste, and a little water. When cooked through (which takes about five minutes) the rum is added, and the casserole is left in the oven to cook very gently. If put in when the spinach dish is removed to the table it will be ready in perfect time for the sweet course. Cream should be served with it.
