X TO-DAY’S RECIPE < * 4 4 JELLIED SALMON 3 t | v Drain the liquor from a tin of J 4 salmon. Flake the fish and mix 4 f thoroughly with 1 teaspoon 4 sugar, i teaspoon salt, 31 table- 4 * spoons flour, 1 teaspoon mustard 4 pinch of cayenne, 11 teaspoons 4 lemon juice and the yolks of 2 $ * eggs slightly beaten. Add li 4 T tablespoons melted butter, S cup 'f 4. cream, i cup vinegar. Cook al- 4 f together, stirring constantly un- J 4 til mixture thickens. Then strain 4 ? into it 1 tablespoon gelatine £ 4 dissolved in 2 tablespoons cold 4 X water. Fill a wetted mould with X 4 the mixture and serve with white 4 X sauce. X
