£ DUCHESS TART | 4* * 8 ozs short crust. Line 8 inch J’ * sandwich tin with the crust, ;• prick well and spread thinly *;* with apricot jam. Take li ozs butter, 1 egg, 1 oz sugar, 5 ozs *:* 4* cake crumbs or breadcrumbs. If •:« •? latter, add lemon rind and a * little more sugar. Beat butter * and sugar to a cream, beat in X »:« egg and crumbs. Cover jam with t the mixture, decorate top with twisted strips of pastry and bake <• *:* for 35 minutes. X
